Area of production: Rouffach region
Sheltered by the highest peaks of the Vosges, the hillsides of the Rouffach region are exceptionally sunny. The composition of the subsoil, mainly composed of limestone, ensures good drainage. The exposure varies from east to south-west.
Grape varieties: 100% pinot noir
Average age of vines: 20 years
This crémant is made with pinot noir grapes only. The grapes are harvested exclusively from the clay-limestone soil of the Rouffach region. The grapes are pressed whole after a light maceration which gives the Crémant d’Alsace rosé its colour. The juice undergoes its first fermentation in casks. The wine is then aged on fine lees. The wine acquires its elegance and fullness in the bottle during the second fermentation called prise de mousse. The long contact with the lees and the riddling bring a smoothness that balances the beautiful acidity of the wine. The lees are removed at the time of disgorging and replaced by the liqueur d’expédition. Following disgorgement, the wine is left to rest for a few months to restore its harmony.
Dosage: brut (between 8 and 10 g/L)
This crémant has got a nice pink colour. There is a persistent string of fine bubbles around the glass. Its open nose gives off scents of red fruits (strawberry, raspberry). On the palate it is rounded but strong. Some tannins from the pinot noir make a nice virility impression. At last, the finish is fine, fresh and long. It is to be served as an aperitif or with a meal.

«A pale-pink color and an appetizing aroma of baked red apples make this very appetizing. There is a certain creaminess on the nose, too, which also pervades the wonderfully tart but ripe red-apple fruit. In the background is a hint of patisserie as a proof of subtle autolysis. This is fresh with pristine flavors and tiny bubbles. A-K»
